Meatball Gyro Ingredients:
16-20Precooked, frozen meatballs

Lemony Greek Rice Ingredients:
3/4CupLong grain white rice
1 1/4CupChicken broth
1/2TspGreek seasoning
Lemon zest from 1/2 lemon

Instructions
Tzatziki Instructions:
Mix all ingredients together in a medium sized bowl. Taste flavors and adjust seasonings accordingly. Store covered in fridge until ready to serve.
Cucumber Salad Instructions:
If starting your salad directly before making the gyros, preheat your oven according to the meatball package instructions.
Mix all ingredients together in a large salad bowl. Taste flavors and adjust seasonings accordingly. Store covered in the fridge until ready to serve.
Meatball Gyros and Lemon Rice
Cook meatballs according to package instructions. If using Costco meatballs, wait to put them in the oven until rice is boiling.
Combine rice, chicken broth and Greek seasoning in a small pot over high heat. Bring to a boil.
Once boiling, cover and reduce heat to low. Allow to sit and steam for 18 minutes.
Once rice is finished, add lemon zest and butter. Fluff gently. Set aside.
When meatballs have finished, assemble gyros by putting 4-5 meatballs in each pita. Follow this by adding shredded lettuce, then tzatziki, then the cucumber salad, and finally the feta cheese.
After assembling the gyros, divide rice and remaining salad between plates.

Cook time may vary depending on the type of rice and meatballs used.
