Country Hamburger Casserole

Ingredients

  • 1 tbsp olive oil
  • 1 1/2 lbs ground beef or turkey
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 4 oz cans sliced mushrooms, drained well
  • 1 tbsp worcestershire
  • 1 15 oz can of corn, drained
  • 1 22.6 oz family sized can cream of chicken or cream of mushroom soup
  • 1 1/4 cup milk
  • 2 8 oz packets of instant mashed potatoes (I used Idahoan Chive and Herb), prepared according to package instructions

Instructions

  • Preheat oven to 350°F and spray a 13x9 casserole dish with non-stick spray. Heat olive oil over medium high heat in large saute pan with high sides.
  • Add ground beef or ground turkey with salt, pepper, Italian seasoning, and garlic powder. Brown for 5-6 minutes.
  • Add onion and garlic and saute until onion has softened, 4-5 minutes.
  • Add mushrooms, worcestershire sauce and corn. Saute until mushrooms are fully heated. Season with a touch more salt and pepper, to taste.
  • Meanwhile, in a mixing bowl, whisk together cream of chicken and the milk until the milk is fully incorporated and the mixture is smooth.
  • Pour the cream of chicken mixture into the meat mixture. Simmer for 10 minutes. Transfer to the prepared casserole dish. Top with prepared potatoes. Bake for 20 minutes uncovered.
  • Serve and enjoy.
