Pizza Muffins

Equipment

  • 12 ct. muffin pan
  • large saute pan

Ingredients

  • non-stick cooking spray
  • 2 tbsp olive oil
  • 1 lb ground chicken sausage
  • 1/2 onion, diced
  • 5 cloves garlic, minced
  • salt and pepper, to taste
  • 2 tbsp Italian seasoning, divided
  • 1 14 oz jar pizza sauce
  • 6 Pillsbury Grands Flaky Layers biscuits, separated into two halves each
  • 1 8 oz package shredded mozzarella, divided
  • 12 slices pepperoni

Instructions

  • Preheat the oven to 400°. Spray a 12 ct muffin tin with nonstick cooking spray.
  • Heat oil in a deep sided sauce pan over medium-high heat.
  • Once the oil is hot, add chicken sausage, onion, garlic, salt and pepper, and 1/2 of the Italian seasoning. Crumble the sausage, browning until no longer pink and all other ingredients are softened, 7-10 minutes.
  • Add pizza sauce and remaining Italian seasoning. Simmer 5 minutes, mixing well and stirring occasionally.
  • While the meat mixture simmers, press one half of the dough of each biscuit into the spaces in the muffin pan. Press the dough down into each muffin cup, pressing the biscuit up the sides to form a cup or nest with the dough. Be careful not to tear through the dough to the bottom of the pan while pressing.
  • Remove meat mixture from the heat and stir in 1/2 of the mozzarella until fully incorporated and melted. Scoop the mixture into each biscuit cup. You may not need all of the filling.
  • Top each cup with the remaining cheese and a slice of pepperoni. Bake for 15-17 minutes or until each of the biscuits are fully cooked.
  • Serve and enjoy!
