This recipe combines all of my favorite breakfast items in one delicious dish: biscuits, sausage, gravy, eggs and potatoes. It’s versatile enough to serve for Sunday brunch or for Christmas morning. So, let’s dig in!
Sausage Gravy and Biscuits
You can’t have biscuits without gravy, right? Well, I mean I guess you can, but they’ll just be really sad biscuits. But in this casserole, there aren’t any sad biscuits. I only eat delicious biscuits. Now that being said, I cut a lot of corners with this recipe, like my other lazy recipes. As a busy mom, I simply didn’t have time to make the country gravy and biscuits myself. So yeah, I used packaged gravy mix and added sausage crumbles to it and Pillsbury grands. My favorite Pillsbury biscuits are the southern style buttermilk grands, which you can see here.
For the sausage gravy and biscuits, you’re going to make them first and set them aside while you make the egg and potato mixture. With the biscuits, you’re only going to partially cook them to ensure the bottoms are fully cooked at the end of the cook time. But while they’re baking, you’re going to make the filling!
Eggs and Taters
The filling is pretty simple. Eggs, potatoes o’brien and garlic with some seasoning! You’re going to start by making scrambled eggs with 6 eggs and milk. You can always add more eggs if you’d like! But you’re going to cook them about halfway and then add in the frozen potatoes o’brien and garlic allowing them to soften.
Season everything up and then when the eggs are fully cooked, transfer the mixture to your casserole dish and top with cheese and the sausage gravy. Slap the partially cooked biscuits on top and sprinkle more cheese and bake. You want to make sure the casserole is hot throughout and the biscuits cook fully.
That’s basically all there is to it! It’s a pretty simple people pleasing dish that you can’t really go wrong with for anyone who has taste buds. It’s perfect for brunches, holidays, or just cozy weekends at home.
Sausage Gravy and Biscuit Breakfast Casserole
Ingredients
- 1 lb country ground pork sausage, cooked and crumbled Either drained or undrained is fine depending on preference. Undrained provides more flavor to the gravy.
- 3 1.3 oz packages country gravy mix, cooked according to package instructions approx. 3 cups country gravy
- 1 8 ct. package Pillsbury Southern homestyle buttermilk biscuits
- 6 large eggs Can add more, but also need to increase the amount of milk.
- 2 tbsp milk 1 tbsp for every 3 eggs added.
- 4 cloves minced garlic
- 1 28 oz pkg frozen potatoes o'brien small cubed potatoes with onion and bell pepper
- pepper to taste salt isn't really needed as the gravy, cheese, and sausage are all salty as is.
- 1 tsp paprika
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat oven to 325°F. Grease a 13×9 casserole dish.
- Mix sausage with prepared country gravy until well incorporated, set aside.
- Melt butter in a large deep skillet with high sides over medium-high heat. While butter melts, place biscuits on a baking sheet and bake for 10-13 minutes or until the bottoms of the biscuits are fairly well set. Remove from oven and set aside.
- While the biscuits are baking, whisk together the eggs and milk in a medium sized mixing bowl. When the butter is fully melted and the pan is hot, add the eggs stirring frequently until about halfway cooked (3-4 minutes). Push the eggs to one side of the pan and add the frozen potatoes and garlic, breaking up any frozen clumps and allowing both the potatoes and garlic to soften, approximately 2 minutes. Add seasonings and mix everything together. Cook five more minutes or until potatoes are fully heated through and egg is fully cooked. Remove from heat.
- Transfer the egg and potato mixture to the greased casserole dish. Sprinkle with half of the cheese and then pour the sausage and gravy mixture over the top. Top with the partially cooked biscuits. Sprinkle remaining cheese over the top of the biscuits. Bake for 10-15 minutes or until the casserole is heated through, cheese is melted, and biscuits are fully cooked. If the biscuits brown too quickly, you can cover with tin foil to keep from burning.
- Allow to sit for 10 minutes to cool before serving. Enjoy!

Great recipe, family loved it. I did make my own biscuits with Pioneer biscuit mix, its super easy, just add water. I don’t roll flat though. I roll into a tube shape, cut and shape a little by hand, takes about 5 minutes. Nice thing about this biscuit is these taste like Fair Scones when you put jam on them. BTW, Pioneer also makes delicious gravy.
