Roasted Potato Wedges with Garlic and Olive Oil

Hey everyone! I know we do a lot of full blown meals here at Growing Up Garlicky, but I have been trying really hard to putting more effort into side dishes too! I want you to be able to come here for whatever you’re looking for. That being said, this is my take on oven roasted potato wedges. This is one of our favorite sides because they’re so easy to make and are absolutely delicious. Here we go!

Special Equipment or Ingredients Needed:

There isn’t anything needed for these roasted potato wedges that you likely won’t already have lying around at home. You’ll need garlic powder, salt, pepper, paprika, and Italian seasoning. Lastly, you’ll also need olive oil. If you really want to kick up the garlic flavor, you could grab an infused olive oil like this Garlic Olive Oil from Colavita. It’s so good, especially for dipping bread, ugh. Okay, sorry, I got carried away, but seriously, try it sometime!

These pictures will show you just about how much seasoning I use as well as what they should look like when they’ve been tossed in oil and when they’re done.

In the first picture, I’ve only added the seasonings mentioned earlier. In the second picture, I’ve tossed them in oil and really mixed them around so that I coat all of the potato wedges with seasoning. The last two pictures show that the potato wedges are super crispy and perfectly cooked.

Oven Roasted Garlic Potato Wedges

Prep Time10 mins
Cook Time30 mins
Servings: 3 people

Equipment

  • Nonstick Baking Sheet

Ingredients

  • 3-4 large gold potatoes, peeled, cut into 1/2 inch wedges
  • salt and pepper, to taste
  • 1/2 tbsp Italian seasoning
  • 1/2 tbsp garlic powder
  • 1 tsp paprika
  • Light drizzle of olive oil to coat

Instructions

  • Preheat the oven to 400°.
  • On a non-stick baking sheet arrange the potato wedges so that they are not overlapping. Season all over with seasonings.
  • Drizzle the olive oil over the potatoes to lightly coat them. Toss potato wedges to evenly distribute oil and seasonings on all sides.
  • Bake for 25-30 minutes or when they become crispy on the outside but no longer firm in the center. Flipping once at the half way point.
  • Serve and enjoy!

This side dish is super easy and effortless. I find that these potato wedges really go well with just about anything! Chicken, fish, you name it! We had these ones with meatloaf and they paired together perfectly!
