Garlic Peas and Carrots

In our house, I’m always trying to find new ways to incorporate veggies into our meals. I don’t think it’s possible to have a well balanced meal without produce of some sort! That being said, these buttery garlic peas and carrots are a super simple, quick, and easy side. They pair perfectly with so many main dishes. This recipe only take about 15 minutes to make and it’s absolutely delicious! Also, keep in mind, I grew up HAAAAATING peas, but this is one of my favorite veggie recipes now. Even my almost two-year-old loves them!

The Making of Garlic Peas and Carrots:

In the video below, you can see the steps I take to make this delicious side dish. It’s one that I like to make when I’m short on time because it’s so quick and doesn’t require much effort. It would also be extremely easy to make this vegan by using something like olive oil instead of butter.

As you can see here, there’s nothing overly special that you need to make this recipe. You just need a basic saute pan, a spatula, a good knife to cut up the onion and I also recommend a garlic press for using fresh garlic.

Garlic Butter Peas and Carrots

Servings: 4 servings

Ingredients

  • 2 tbsp butter
  • 1/4 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cups frozen diced peas and carrots (No need to thaw)
  • salt and pepper, to taste
  • 1 tsp Italian seasoning

Instructions

  • Heat butter in a large sauté pan over medium-high heat.
  • Add onion and sauté for 3 minutes.
  • Add garlic and sauté until fragrant, about 30 seconds to 1 minute.
  • Add peas and carrots, stirring frequently. Add all seasonings. Sauté until the peas and carrots are no longer frozen and are tender-crisp, approximately 7-10 minutes.
  • Serve and enjoy

And there you have it! This is one of my favorite sides because I can pull the peas and carrots out of the freezer and basically just heat it up. In less than 20 minutes, bam! Dinner is complete!
