This is one of my first times making a smoothie using my own recipe! The inspiration to make my own smoothie came from when I tried this recipe for Mile High Mitts’ spiced pear green smoothie earlier this fall. It was so good that I thought I would give a carrot cake smoothie a shot! I’m super happy with how it turned out and everyone else was too.
For the banana, I like to use a frozen one because it gets rid of any need to add ice, which can water down your smoothie and compromise the flavor if you aren’t able to drink it right away. The banana adds a lot of natural sweetness and flavor. That being said, when it’s frozen, it’s really hard to peel, so I just cut it into chunks and then cut the peel off with the same knife.
Next, you’ll need one or two medium-large carrots. It’s totally fine to add more or less carrot depending on your preference. I find using the smallest setting makes the smoothie less gritty than using the larger holes, so I grated mine very finely until I had approximately 1 1/2 cups of shredded carrot to really pack in that carrot cake flavor. Once your banana and carrot are prepped, you can toss everything except for your walnuts and whipped cream into the blender and blend until silky smooth!
After you’ve finished blending the smoothie, you can add whatever toppings you’d like! Here, I’ve added whipped cream, a small sprinkle of cinnamon, and chopped walnuts. And there you have it! A spiced carrot cake smoothie!
