
In today’s post, I’ll show you how to make perfect, flavorful oven roasted carrots. They pair really nicely with almost any dish. We had them with meatloaf sandwiches, but they would also go well with chicken, fish, steak, etc. Roasted carrots are a staple in our house. So let’s get started!
Special Equipment or Ingredients Needed:
As far as kitchenware goes, you likely have everything you need in your kitchen already. With that in mind, here are the tools I would suggest having for this delicious side dish.
- A sharp vegetable peeler. I use this tool so frequently. If you don’t have one, or yours is super dull, I recommend grabbing a new one.
- A large, sharp knife such as a santoku knife or chef knife. We have both in our Emeril knife block, which is really reasonably priced for being a full knife set.
- A good quality non-stick baking sheet. We replace ours every couple years and just recently got these blue ones that match our kitchen decor!
Aside from some basic kitchen supplies, there aren’t really any special ingredients that you likely don’t already have. The only thing you may not have already is Old Bay seasoning. I love this stuff. It’s great in southern or creole dishes. So good!

Recipe:
Roasted Carrots with Old Bay and Garlic
Ingredients
- 4 large carrots, peeled and cut at a 1/2 inch thick diagonal
- 2 tbsp olive oil
- 1/2 tsp old bay
- pinch of salt and pepper
- 1/2 tbsp Italian seasoning
- 1/2 tsp onion powder
- 1/2 tbsp garlic powder
Instructions
- Preheat oven to 400°F.
- On a nonstick cookie sheet, drizzle carrots with olive oil and sprinkle with all seasonings.
- Mix until all carrots are well coated with oil and seasonings on all sides.
- Bake for 15 minutes uncovered, flip, and bake an additional 10 minutes.
- Serve and enjoy!
