Sometimes it’s fun to change things up and make a family fun meal that everyone will enjoy. This recipe was most definitely approved by my husband and I, but most importantly, our toddler enjoyed it too. For today’s Foodie Friday post, I bring you these delicious, gooey pepperoni and sausage pizza muffins. These personal little pizza muffins were so fun! You can serve them for anything from an appetizer to dinner. Let’s go!
Special Ingredients or Supplies Needed:
The only supplies you’ll need are ones that you likely have laying around anyway! To make these cute mini pizzas, you’ll definitely need a muffin tin, for obvious reasons, but you’ll also need a good, deep saute pan. Other than that, you may also want a good quality garlic press like this OXO one that I use almost every day. There aren’t really any other specialty ingredients that you’ll need, but I do use chicken sausage in this recipe in place of pork sausage. If you can’t find ground chicken sausage, feel free to use pork sausage!

In the following photos, you’ll see the steps I take to make this yummy dish! We start by making the sauce. While the sauce simmers, I prepare the biscuits in the muffin tin, then you can see the rest!
Recipe for Pizza Muffins:
Pizza Muffins
Equipment
- 12 ct. muffin pan
- large saute pan
Ingredients
- non-stick cooking spray
- 2 tbsp olive oil
- 1 lb ground chicken sausage
- 1/2 onion, diced
- 5 cloves garlic, minced
- salt and pepper, to taste
- 2 tbsp Italian seasoning, divided
- 1 14 oz jar pizza sauce
- 6 Pillsbury Grands Flaky Layers biscuits, separated into two halves each
- 1 8 oz package shredded mozzarella, divided
- 12 slices pepperoni
Instructions
- Preheat the oven to 400°. Spray a 12 ct muffin tin with nonstick cooking spray.
- Heat oil in a deep sided sauce pan over medium-high heat.
- Once the oil is hot, add chicken sausage, onion, garlic, salt and pepper, and 1/2 of the Italian seasoning. Crumble the sausage, browning until no longer pink and all other ingredients are softened, 7-10 minutes.
- Add pizza sauce and remaining Italian seasoning. Simmer 5 minutes, mixing well and stirring occasionally.
- While the meat mixture simmers, press one half of the dough of each biscuit into the spaces in the muffin pan. Press the dough down into each muffin cup, pressing the biscuit up the sides to form a cup or nest with the dough. Be careful not to tear through the dough to the bottom of the pan while pressing.
- Remove meat mixture from the heat and stir in 1/2 of the mozzarella until fully incorporated and melted. Scoop the mixture into each biscuit cup. You may not need all of the filling.
- Top each cup with the remaining cheese and a slice of pepperoni. Bake for 15-17 minutes or until each of the biscuits are fully cooked.
- Serve and enjoy!
And that’s all there is to it. It’s a very simple recipe that both kiddos and adults alike will enjoy. You could even sneak in some hidden veggies into the sauce and nobody would ever even know!
