This casserole is easy, yummy and filling. It’s similar to shepherd’s pie but with more of a country twist by using cream of chicken soup to create a gravy. This is my country hamburger casserole.

This is a pretty basic recipe using ingredients you should be able to find nearly anywhere and everywhere. This casserole is very close in nature to a shepherd’s pie. For the base, you cook ground beef or ground turkey in cream of chicken gravy with mushrooms, onion, and corn. You put this into a casserole dish, top with mashed potatoes and bake it!

You start off by combining ground beef or turkey with onion and garlic. Then you add mushrooms, corn and seasonings. Next you mix in the gravy. Lastly, like I mentioned above, transfer it into a casserole dish, then top with the potatoes and bake it. It’s not the prettiest looking dish, but it’s absolutely delicious! This is a recipe that really reminds me of home. It’s comfort food for sure.

Ingredients
- 1 tbsp olive oil
- 1 1/2 lbs ground beef or turkey
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp Italian seasoning
- 1 tbsp garlic powder
- 1 onion, diced
- 3 cloves garlic, minced
- 2 4 oz cans sliced mushrooms, drained well
- 1 tbsp worcestershire
- 1 15 oz can of corn, drained
- 1 22.6 oz family sized can cream of chicken or cream of mushroom soup
- 1 1/4 cup milk
- 2 8 oz packets of instant mashed potatoes (I used Idahoan Chive and Herb), prepared according to package instructions
Instructions
- Preheat oven to 350°F and spray a 13×9 casserole dish with non-stick spray. Heat olive oil over medium high heat in large saute pan with high sides.
- Add ground beef or ground turkey with salt, pepper, Italian seasoning, and garlic powder. Brown for 5-6 minutes.
- Add onion and garlic and saute until onion has softened, 4-5 minutes.
- Add mushrooms, worcestershire sauce and corn. Saute until mushrooms are fully heated. Season with a touch more salt and pepper, to taste.
- Meanwhile, in a mixing bowl, whisk together cream of chicken and the milk until the milk is fully incorporated and the mixture is smooth.
- Pour the cream of chicken mixture into the meat mixture. Simmer for 10 minutes. Transfer to the prepared casserole dish. Top with prepared potatoes. Bake for 20 minutes uncovered.
- Serve and enjoy.
