We made this corn and black bean salad for our son’s second birthday last year. It was the PERFECT summer time salad and everyone raved about how delicious it was. So, if you’re going to any potlucks or gatherings, I highly recommend this dish. Everyone will love it. In this post, I’ll show you how to make it! So, here we go.
Specialty Kitchen Equipment or Ingredients Needed:
For this corn and black bean salad, since this recipe serves a lot of people, I highly recommend a large serving dish and a set of mixing bowls. You’ll want smaller bowls for making the dressing, but a bigger bowl for mixing all of the ingredients together. I also really highly recommend a sharp knife. This recipe involves a decent amount of chopping, so I recommend either a sharp knife or a knife sharpener to make slicing everything a breeze.
As far as ingredients go, I don’t think there’s anything in this recipe that you can’t find at your average grocery store.

Corn and Black Bean Salad for a Crowd
Equipment

Ingredients
Salad Ingredients
- 8 ears corn on the cob, fresh You can also use canned, but it's not nearly as good.
- 1 large green bell pepper, diced
- 1 large red bell pepper, diced
- 1 large yellow bell pepper, diced
- 1 bunch cilantro, chopped
- 2 pints cherry tomatoes, halved If you have young kids, quartering the tomatoes lengthwise is safest.
- 1 large red onion, diced
- 2 15 oz cans black beans, rinsed and drained
Dressing Ingredients
- Juice of 3 limes
- 1/4 cup olive oil
- 2 tsp garlic salt
- 1 tsp ground black pepper
- 1 tbsp Italian seasoning
- 1 1/2 tsp sugar
- 4 cloves minced garlic
Instructions
- Into a large mixing bowl, slice the kernels off of the corn cobs. Try to cut as close to the cob as possible to ensure the corn kernels are in tact.
- Add all remaining salad ingredients to the large mixing bowl with the corn.
- In a smaller bowl, mix together all dressing ingredients until smooth. Pour over top of the salad ingredients. Mix well.
- Refrigerate immediately until serving. Stir everything to reincorporate the dressing right before serving.
- Serve and enjoy!
Notes
This corn and black bean salad is seriously so easy. I’ve also received many compliments on it. I highly recommend it for any gathering, especially when it’s hot out. We found this salad to be incredibly refreshing in the summer heat.
