These chicken stuffing cups make a super yummy and filling lunch. Kids will love them, guaranteed. Also, Thanksgiving is coming up and this is a great recipe for leftover turkey and stuffing too! Taking only about 30 minutes, this recipe is quick, easy, and delicious. Let’s get started!
Special Ingredients or Equipment Needed:
One of the kitchen supplies you’ll want is a good, nonstick 12 ct muffin pan. You’ll also want a whisk for making the gravy. These are pretty much the only things you’ll need aside from a spoon to scoop all of the ingredients into each muffin tin.
As far as ingredients go, all ingredients should be able to be purchased nearly anywhere you go.

Essentially for these chicken stuffing cups, you’ll take prepared cold stuffing, mix it with one egg to add a binding agent so it sticks together, and make it into a small nest for the remaining ingredients. Then you add chicken, gravy, and swiss cheese to the top and bake them!
Recipe:
Chicken Stuffing Cups
Ingredients
- 1 6 oz box chicken or turkey Stove Top stuffing, prepared according to box directions and refrigerated until cold.
- 1 egg
- 2 cups cooked shredded chicken or turkey
- 1 .87 oz package chicken gravy mix, prepared according to package directions
- 6 oz shredded swiss cheese
Instructions
- Preheat oven to 350°F. Spray a 12 ct muffin pan with nonstick spray.
- Mix cold stuffing mix with raw egg until the egg is fully incorporated. Equally divide the stuffing mixture into each of the muffin tins pressing down in the center to form a nest. Fill each tin about 2/3 of the way full. You may not need all of the stuffing.
- Top each of the stuffing cups equally with chicken. Spoon approximately 1 1/2 tbsp of gravy over top of each stuffing cup. Sprinkle cheese over each one.
- Bake uncovered for 15-20 minutes or until cheese is melted. If the stuffing begins to brown too quickly, feel free to cover with tin foil.
- Let sit for 5 minutes after cooking.
- Remove carefully so as to make sure the stuffing cups don't fall apart. Serve and enjoy!
These are such a yummy treat that are super simple to make. Like I mentioned above, these would be perfect for Thanksgiving leftovers or just for an easy lunch that the whole family will love.
